This Vegan & Gluten-Free Fig Cake is perfect for showcasing seasonal figs, this easy-to-make cake uses almond flour and flaxseeds to provide a nutritious and satisfying treat. I use fresh orange juice to naturally sweeten the batter, but you can also add maple syrup for a richer flavor.

Vegan & Gluten-Free Fig Cake: A Simple, Healthy Delight


INGREDIENTS
  • 215 g almond flour (blend unpeeled almonds for a more natural texture)

  • 50 g brown rice flour or oat flour

  • 25 g ground flaxseeds (blend with almonds)

  • 190 g fresh orange juice (about 1 to 2 oranges, or 100 ml maple syrup for a sweeter option)

  • 1 tsp baking powder

  • 200 g fresh or frozen figs, chopped


INSTRUCTIONS
  1. Preheat your oven to 180°C (350°F).

  2. In a large bowl, combine all the dry ingredients:

    • almond flour,

    • flour (rice flour or oat flour),

    • ground flaxseeds,

    • and baking powder.Mix well.

      Quick tip: You can also blend whole almonds, oats, and flaxseeds in a food processor until finely ground, then add the baking powder.

  3. Add the fresh orange juice (or maple syrup) to the dry mixture and stir gently to combine, being careful not to overmix to preserve the leavening action of the baking powder.

  4. Prepare your cake pan: grease it with coconut oil or line it with parchment paper. Then, pour the batter into the pan.

  5. Top with figs (or your choice of fruits such as pears, apples, or berries) and distribute them evenly over the batter.

  6. Bake for 35-40 minutes at 180°C (350°F).Check the doneness by gently pressing the top of the cake — it should feel firm and golden.

  7. Allow the cake to cool on a wire rack before removing it from the pan.


Storage

This Vegan & Gluten-Free Fig Cake is best enjoyed the same day at room temperature.However, you can store leftovers in the fridge for up to 3-4 days in an airtight container.
