Vegan & Gluten-Free Seed Crackers – Easy, Crunchy & Healthy


INGREDIENTS (for about 30 crackers – 1 baking tray)
  • 150 g chickpea flour

  • 40 g sunflower seeds

  • 40 g sesame seeds

  • 30 g brown flax seeds (whole or ground)

  • ½ tsp salt

  • 20 g olive oil

  • 220–250 ml water

    Optional: fresh or dried herbs, spices (rosemary, thyme, paprika…)


INSTRUCTIONS
  1. Preheat your oven to 180°C / 350°F.

  2. In a large bowl, mix together all dry ingredients: flour, seeds, and salt.

  3. Add the olive oil, then gradually pour in the water while mixing until you get a smooth, even dough.

  4. Line a baking tray with parchment paper or a non-stick silicone mat. Spread the dough thinly and evenly using a spatula.

  5. Bake for 30 minutes at 180°C / 350°F.


Baking tip: For even crackers, remove the tray after 15 minutes, cut the dough into rectangles (using a knife, pizza cutter, or cookie cutter), then return to the oven for the remaining 15 minutes.


For extra crunch, flip the crackers during the last few minutes and bake for an additional 5 minutes.


  1. Let them cool completely on a wire rack to prevent softening.


Storage
  • Store in an airtight container at room temperature to keep them crispy.

  • They’ll stay fresh for over a month (if they last that long!).
