This vegan and gluten-free pear cake is perfect for showcasing seasonal pears. Easy to make, it’s made with almond flour and flaxseeds, creating a dessert that’s both healthy and indulgent. I use fresh orange juice to naturally sweeten the batter, but you can also add maple syrup for an extra sweet touch.

INGREDIENTS
215 g almond flour (I blend unpeeled almonds for a more natural texture)
50 g whole grain rice flour or oat flour
25 g ground flaxseeds (I grind them with the almonds)
190 g fresh orange juice (about 1-2 oranges, or 100 ml maple syrup for a sweeter option)
1 tsp baking powder
2-3 pears (depending on size)
INSTRUCTIONS
Preheat the oven to 180°C (350°F).
In a large bowl, combine all the dry ingredients:
almond flour,
flour,
ground flaxseeds,
and baking powder. Mix well.
Alternatively, you can blend whole almonds, oats, and flaxseeds in a food processor until finely ground, then add the baking powder.
Add the fresh orange juice to the dry ingredients and mix gently, taking care not to overmix so as not to deflate the baking powder.
Grease your cake pan with coconut oil or line it with parchment paper, then pour the batter into the pan.
Arrange the chopped pears on top of the batter and distribute them evenly.
Bake for 35-40 minutes at 180°C (350°F). Check with a knife — it should come out clean.
Let the cake cool on a wire rack before removing it from the pan.
Storage
This Vegan & Gluten-Free Pear Cake is best enjoyed the same day at room temperature.However, you can store leftovers in the fridge for up to 3-4 days in an airtight container.
