One bowl almond & fruit cake (GF+ vegan)


This one bowl almond & fruit cake (GF + vegan) is quick and easy to make. It is without added sugar to make it healthier but it remains just as delicious thanks to the almond powder and fruits. I use fresh orange juice to naturally sweeten the cake batter but I also give you an option with maple syrup for a sweeter option.


I give you a basic recipe that you can customize with fresh seasonal fruits. For example, in summer I use fresh figs, in autumn beautiful pears and in spring beautiful red fruits.


ALMONDS

Almonds are rich in good fats that promote cardiovascular health. They are rich in protein and are an excellent source of essential micronutrients.


FLAX SEEDS

Naturally gluten-free, flax seeds are a valuable source of minerals, essential fatty acids and vitamins. Rich in fiber, they have satiating properties and optimize intestinal function.

Flax seeds are ideal in plant-based cooking because they can replace eggs thanks to their gelatinous texture once finely mixed.

Ingredients

Basic recipe

  • 215 g ground almonds (I blend the unshelled almonds in a blender)

  • 50 g of brown rice flour or oat flour

  • 25 g of mixed flax seeds (I mix them in a blender with the almonds)

  • 190 g of fresh orange juice (about 1 to 2 oranges depending on their size and the juice they give) or 100 ml of maple syrup (gourmet option)

  • 1 tbsp. baking powder

Options

  • 200 g of fresh or frozen figs

  • 2-3 pears

  • 2-3 apples

  • red fruits (blackberries, blueberries...)


Instructions

  1. Preheat the oven to 180°C.

  2. In a large bowl, place all the dry ingredients - ground almonds, flour, ground flax seeds and baking powder. Blend. - or place the unmixed almonds, oats and flax seeds in a food processor and mix until there are no more lumps, then add the baking powder.

  3. Add the orange juice. Mix just enough so as not to reduce the action of the baking powder.

  4. Oil the mold with coconut oil or use baking paper then pour the mixture into a cake mold.

  5. Arrange the fruits of your choice on the dough.

  6. Bake for 35-40 minutes at 180°C.

  7. Once baked, the cake should unmold easily. Place it on a wire rack to cool.

This almond & fruit cake (Gluten-free + vegan) is best the same day at room temperature. You can keep it for a few days in the fridge.
