no-bake cranberry, coconut & dark chocolate energy bars


INGREDIENTS (makes 8 bars)
  • 200 g dried cranberries

  • 100 g shredded coconut + approx. 10 g for topping

  • 40 g dark chocolate (70% cocoa minimum)


INSTRUCTIONS
  1. In a food processor or blender, blend the cranberries and shredded coconut until a sticky, even mixture forms.

  2. Line a loaf tin with parchment paper. Press the cranberry-coconut mixture firmly into the bottom using the back of a spoon.

  3. Place the tin in the fridge while you melt the chocolate in the microwave or in a bain-marie (double boiler).

  4. Pour the melted chocolate over the mixture, spreading it evenly. Sprinkle with shredded coconut for decoration.

  5. Refrigerate for at least 1 hour until the chocolate has set.

  6. Remove from the tin and cut into 8 bars or into small bite-sized squares for a more convenient snack.


Tips & Storage
  • For an extra indulgent twist, add a pinch of vanilla or cinnamon to the cranberry-coconut mixture.

  • These bars are perfect for a healthy work break, a pre-workout snack, or alongside a cup of tea or coffee.

  • Store in an airtight container in the refrigerator for up to 2 weeks.
