No-Bake Coconut Chocolate Cookies – Vegan & Gluten-Free
INGREDIENTS
200 g raisins (or pitted dates)
100 g unsweetened shredded coconut
40 g dark chocolate
1/2 tsp coconut oil
INSTRUCTIONS
Soak the raisins in hot water for 5–10 minutes to soften them.
Lightly toast the shredded coconut in a dry skillet over medium heat until golden. Be careful not to burn it!
Drain the raisins, then blend them with the coconut in a food processor until a sticky dough forms.
With damp hands, form small balls, flatten them slightly, and press a hole in the center like a mini donut. Arrange them on a tray or plate.
Chill the cookies in the fridge for about 10 minutes to firm up.
Melt the dark chocolate with the coconut oil, then dip each cookie into the chocolate.
Place the cookies back on the tray and drizzle the remaining chocolate over the top.
Chill again until the chocolate is set.
Tip
Add a pinch of sea salt or a dash of vanilla extract to enhance the flavor even more.
Storage
Store in an airtight container in the fridge for up to 3 weeks.
