Almond Muffins (Gluten-Free & Vegan)
Ingredients
(For approximately 6 muffins)
50 g melted deodorized coconut oil
200 ml plain plant-based milk (almond, oat, rice, soy…)
4 tablespoons (50 g) maple syrup
1 teaspoon apple cider vinegar (optional)
150 g almond flour (or whole almonds ground into flour)
150 g brown rice flour
2 heaping teaspoons of baking powder
Instructions
Preheat your oven to 180°C (350°F).
In a large bowl, mix the melted coconut oil with the plant milk, maple syrup, and vinegar.
Add the almond flour, brown rice flour, and baking powder. Stir just enough to combine.
Pour the batter into muffin molds. For a crunchy top, drizzle a few drops of maple syrup over each muffin.
Bake for about 20 minutes, or until a toothpick inserted into the center comes out clean.
Tips & Storage
Flavor variations: Add dark chocolate chips, chopped dried fruits, lemon zest, or a pinch of cinnamon.
Storage: Keep in an airtight container for 3 to 4 days at room temperature, or up to a week in the fridge.
