Detox Cauliflower and White Bean Soup – Vegan, Fiber-Rich, and Comforting
INGREDIENTS (Serves 2)
700 g (about 1.5 lbs) cauliflower
1 liter (4 cups) water
1 sprig thyme
1 bay leaf
1 yellow onion
1 garlic clove
400–500 g (14–17 oz) cooked white beans (canned or homemade)
Optional toppings:
Fresh parsley
Toasted sunflower and/or pumpkin seeds
Cold-pressed oil (olive, flaxseed, or canola)
INSTRUCTIONS
Roughly chop the cauliflower, onion, and garlic.
Place the vegetables, thyme, and bay leaf into a pot. Add water, cover, and simmer on very low heat for 25–30 minutes, or until the vegetables are tender.
- Gentle cooking helps preserve nutrients and enhances detoxifying properties.
Transfer everything (including the cooking water) to a blender. Add the white beans and blend until smooth and creamy.
Season with salt and pepper to taste.
