Detox Cauliflower and White Bean Soup – Vegan, Fiber-Rich, and Comforting


INGREDIENTS (Serves 2)
  • 700 g (about 1.5 lbs) cauliflower

  • 1 liter (4 cups) water

  • 1 sprig thyme

  • 1 bay leaf

  • 1 yellow onion

  • 1 garlic clove

  • 400–500 g (14–17 oz) cooked white beans (canned or homemade)


Optional toppings:

  • Fresh parsley

  • Toasted sunflower and/or pumpkin seeds

  • Cold-pressed oil (olive, flaxseed, or canola)


INSTRUCTIONS
  1. Roughly chop the cauliflower, onion, and garlic.

  2. Place the vegetables, thyme, and bay leaf into a pot. Add water, cover, and simmer on very low heat for 25–30 minutes, or until the vegetables are tender.

    - Gentle cooking helps preserve nutrients and enhances detoxifying properties.

  3. Transfer everything (including the cooking water) to a blender. Add the white beans and blend until smooth and creamy.

  4. Season with salt and pepper to taste.

  5. Serve warm with a drizzle of oil, fresh parsley, and toasted seeds.


Tips & Variations
  • This soup stores well in the fridge for 3–4 days.

  • It can be frozen in individual portions.

  • For extra flavor, add spices like cumin, paprika, or turmeric.
